Guanciale, \u0153uf et fromage, de l&#039;eau de p\u00e2tes et vous avez un grand plat.<\/p>\n<p>Mais ma version s&#039;\u00e9loigne un peu du classique et a une approche plut\u00f4t moderne, cela dit les rep\u00e8res et le go\u00fbt final ont \u00e9t\u00e9 respect\u00e9s.<\/p>\n<p>Quoi qu&#039;il en soit, les gens seront fous et ce n&#039;est pas grave, les gens seront coinc\u00e9s dans le pass\u00e9.<\/p>\n<p>Bref, assez parl\u00e9, allons cuisiner ! On y va?<\/p>\n<p><img data-recalc-dims=\"1\" fetchpriority=\"high\" decoding=\"async\" class=\"alignnone  wp-image-2439\" src=\"https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?resize=698%2C943&#038;ssl=1\" alt=\"\" width=\"698\" height=\"943\" srcset=\"https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?resize=222%2C300&amp;ssl=1 222w, https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?resize=759%2C1024&amp;ssl=1 759w, https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?resize=768%2C1037&amp;ssl=1 768w, https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?resize=1138%2C1536&amp;ssl=1 1138w, https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?resize=600%2C810&amp;ssl=1 600w, https:\/\/i0.wp.com\/chefromainavril.com\/wp-content\/uploads\/2022\/04\/IMG_5715.jpg?w=1284&amp;ssl=1 1284w\" sizes=\"(max-width: 698px) 100vw, 698px\" \/><\/p>\n<p>Pour 4 personnes<\/p>\n<p><strong>P\u00e2tes crues<\/strong><br \/>\nVoir recette sur le site<\/p>\n<p><strong>Chips Guanciale<\/strong><br \/>\n12 fines tranches de papier Guanciale<\/p>\n<ul>\n<li>Tranchez le Guanciale ou demandez \u00e0 votre boucher de le faire.<\/li>\n<li>Placez-les sur une plaque \u00e0 p\u00e2tisserie recouverte de papier sulfuris\u00e9 et recouvrez-les d&#039;une autre couche de papier sulfuris\u00e9.<\/li>\n<li>Ajoutez une autre plaque \u00e0 p\u00e2tisserie pour cuire au four en vous assurant qu&#039;ils restent plats et faites-les cuire au four \u00e0 350F pendant 10 minutes ou jusqu&#039;\u00e0 ce qu&#039;ils soient croustillants.<\/li>\n<li>Une fois cuits, placez-les sur du papier absorbant pour absorber le surplus de gras.<\/li>\n<\/ul>\n<p><strong>D\u00e9s Guanciale<br \/>\n<\/strong>6 oz Guanciale\u00a0<strong><br \/>\n<\/strong><\/p>\n<ul>\n<li>Coupez votre Guanciale en d\u00e9s et faites-les cuire dans une po\u00eale froide jusqu&#039;\u00e0 ce qu&#039;ils soient bien croustillants, retirez-les de la po\u00eale sur du papier absorbant.<\/li>\n<li>Mettez de c\u00f4t\u00e9 la majeure partie de la graisse de Guanciale et laissez le reste dans la po\u00eale pour plus tard.<\/li>\n<\/ul>\n<p><strong>Farce aux tortellinis<\/strong><br \/>\nP\u00e2tes crues<br \/>\n3 onces de parmesan<br \/>\n3 onces de p\u00e9corino<br \/>\n4 jaunes d&#039;\u0153ufs<br \/>\n2 oeufs entiers<br \/>\nPoivre noir concass\u00e9 frais (au go\u00fbt)<\/p>\n<ul>\n<li>M\u00e9langer le fromage et les \u0153ufs jusqu&#039;\u00e0 consistance lisse, assaisonner de poivre noir \u00e0 votre go\u00fbt.<\/li>\n<li>Rouler la p\u00e2te finement et d\u00e9couper des cercles de 3\u2033. Gardez les parures de p\u00e2tes pour la mousse.<\/li>\n<li>Ajoutez 1 cuill\u00e8re \u00e0 soupe de hors-m\u00e9lange au centre de chaque cercle, fermez-les et pliez-les. Vous aurez un m\u00e9lange suppl\u00e9mentaire, celui-ci sera utilis\u00e9 pour la mousse.<\/li>\n<li>Placez-les sur un plateau avec de la semoule de ma\u00efs pour durcir, environ 10 minutes.<\/li>\n<\/ul>\n<p><strong>Mousse carbonara<br \/>\n<\/strong>Parures de p\u00e2te<br \/>\nReste de m\u00e9lange d&#039;oeufs<br \/>\nPistolet Isi + Cartouche Co2<br \/>\n4 cuill\u00e8res \u00e0 soupe de graisse Guanciale<\/p>\n<ul>\n<li>Faites cuire les parures dans l&#039;eau pendant une minute et prenez 2 tasses d&#039;eau de cuisson (je mange habituellement les parures avec un peu d&#039;huile d&#039;olive, de la ciboulette et des copeaux de parmesan, la meilleure collation de tous les temps).<\/li>\n<li>M\u00e9langez l&#039;eau de cuisson avec le m\u00e9lange d&#039;\u0153ufs jusqu&#039;\u00e0 consistance lisse et versez-le dans le pistolet ISI.<\/li>\n<li>Chargez-le avec 3 cartouches et placez l&#039;ISI un dans un bol rempli d&#039;eau bouillante (cela maintiendra la mousse au chaud).<\/li>\n<li>Mettre de c\u00f4t\u00e9.<\/li>\n<\/ul>\n<p><strong>Assemblage\u00a0<\/strong><\/p>\n<ul>\n<li>Faites cuire les p\u00e2tes jusqu&#039;\u00e0 ce qu&#039;elles soient al dente et placez-les dans la po\u00eale avec la graisse Guanciale.<\/li>\n<li>M\u00e9langez-les, ajoutez les d\u00e9s de Guanciale.<\/li>\n<li>Assaisonner de poivre noir, ajouter un peu d&#039;eau de cuisson pour \u00e9mulsionner.<\/li>\n<li>Dresser dans le saladier, d\u00e9corer avec les d\u00e9s, recouvrir de mousse.<\/li>\n<li>Garnir avec les chips Guanciale et servir.<\/li>\n<li>Bon app\u00e9tit!<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>Salut mes Petits croissants!
