La s\u0153ur Tatin travaillait \u00e0 l&#039;h\u00f4tel du m\u00eame nom, comme n&#039;importe quel autre jour.<br \/>\nSt\u00e9phine \u00e9tait surmen\u00e9e, elle travaillait \u00e0 la cuisson des pommes au beurre et au sucre pour une tarte ordinaire. Mais sa fatigue lui a fait oublier au point la pomme caram\u00e9lis\u00e9e un peu trop.<\/p>\n<p>Ne sachant que faire, elle jeta la p\u00e2te dessus et la fit cuire comme \u00e7a. Celle-ci deviendra alors la tr\u00e8s c\u00e9l\u00e8bre Tarte Tatin.<br \/>\nD\u00e9licieux seul ou servi avec de la glace ou de la cr\u00e8me fra\u00eeche, ce plat est extr\u00eamement populaire en France et dans le monde.<\/p>\n<p>Pour ma version, j&#039;ai ajout\u00e9 de la fleur de sel de ma ville natale au caramel et j&#039;ai fait une cr\u00e8me Chantilly.<\/p>\n<p>Bon, assez parl\u00e9. Vous ne voulez pas le surchauffer.<\/li>\n<li>Lorsque vous avez une boule de p\u00e2te lisse, enveloppez-la dans du plastique. Roulez-le en carr\u00e9 pour qu&#039;il soit plus facile de rouler plus tard.<\/li>\n<li>R\u00e9frig\u00e9rer pendant au moins 1 heure et jusqu&#039;\u00e0 2 jours.<\/li>\n<li>Au moment de rouler, sortez la p\u00e2te du r\u00e9frig\u00e9rateur et laissez-la \u00e0 peine ramollir \u00e0 temp\u00e9rature ambiante.<\/li>\n<li>La p\u00e2te doit \u00eatre encore froide. Attendez simplement jusqu&#039;\u00e0 ce que vous puissiez commencer \u00e0 le rouler, mais pas jusqu&#039;\u00e0 ce qu&#039;il soit tr\u00e8s mou. Ceci est important pour assurer une p\u00e2te tendre.<\/li>\n<li>Sur un plan de travail l\u00e9g\u00e8rement farin\u00e9, commencez \u00e0 rouler le disque de p\u00e2te en vous assurant de faire souvent des quarts de tour pour vous assurer que la p\u00e2te ne colle pas et en ajoutant plus de farine sur le plan de travail si elle colle.<\/li>\n<li>Arr\u00eatez-vous lorsque la p\u00e2te atteint 1\/4 de pouce d&#039;\u00e9paisseur.<\/li>\n<li>A l&#039;aide d&#039;un emporte-pi\u00e8ce de la taille de votre flexi-moule, d\u00e9coupez des cercles et mettez-les de c\u00f4t\u00e9.<\/li>\n<li>Vous pouvez re-rouler la p\u00e2te en boule et faire des biscuits sabl\u00e9s ou l&#039;envelopper et la conserver au r\u00e9frig\u00e9rateur ou au cong\u00e9lateur.<\/li>\n<\/ul>\n<ol>\n<li style=\"list-style-type: none;\"><\/li>\n<\/ol>\n<p><strong>Pomme caram\u00e9lis\u00e9e<br \/>\n<\/strong>6 pommes Granny Smith (pel\u00e9es et coup\u00e9es en quartiers)<br \/>\n100 gr (1\/2 tasse) de sucre semoule<br \/>\n60gr (1\/4 tasse) Beurre<br \/>\n10gr (2 cuill\u00e8res \u00e0 caf\u00e9) Fleur de Sel<br \/>\n10 ml (2 c. \u00e0 th\u00e9) de p\u00e2te de vanille<br \/>\n1 citron (jus)<\/p>\n<ul>\n<li>Dans une grande casserole profonde, \u00e0 feu moyen-vif. Mettez le sucre et laissez-le se transformer en caramel.<\/li>\n<li>D\u00e9glacer avec le beurre, une fois m\u00e9lang\u00e9 ajouter les pommes.<\/li>\n<li>Faites-les cuire quelques minutes et retournez-les.<\/li>\n<li>Ajouter la Fleur de Sel, la vanille, le jus de citron et remuer.<\/li>\n<li>Laisser cuire encore 4 \u00e0 5 minutes ou jusqu&#039;\u00e0 ce que les pommes soient presque enti\u00e8rement cuites.<\/li>\n<li>D\u00e9posez le caramel au fond des inserts de moule et recouvrez-le de la pomme.<\/li>\n<li>Assurez-vous qu&#039;il est beau et plein. Pressez-les l\u00e9g\u00e8rement pour vous assurer que c&#039;est bien et m\u00eame.<\/li>\n<li>Cela se traduira par une tarte meilleure et plus uniforme.<\/li>\n<li>Laissez-les l\u00e9g\u00e8rement refroidir.<\/li>\n<\/ul>\n<p><strong>Cr\u00e8me Chantilly<br \/>\n<\/strong>125 ml (1\/2 tasse) de cr\u00e8me \u00e9paisse<br \/>\n30 gr (2 cuill\u00e8res \u00e0 soupe) de sucre semoule<br \/>\n5 ml (1 c. \u00e0 th\u00e9) de p\u00e2te de vanille<\/p>\n<ul>\n<li>Dans un bol en inox, fouetter la cr\u00e8me, le sucre et la vanille jusqu&#039;\u00e0 ce que la cr\u00e8me soit compl\u00e8tement fouett\u00e9e.<\/li>\n<li>Couvrez et placez-le au r\u00e9frig\u00e9rateur.<\/li>\n<\/ul>\n<p><strong>Garnir<\/strong><br \/>\n5 gr (1cc) Fleur de Sel<\/p>\n<ul>\n<li>D\u00e9poser le cercle de p\u00e2te sur les pommes caram\u00e9lis\u00e9es.<\/li>\n<li>Faites-les cuire dans un four pr\u00e9chauff\u00e9 \u00e0 350F pendant 20 min ou jusqu&#039;\u00e0 ce que la p\u00e2te soit dor\u00e9e.<\/li>\n<li>Laissez-les refroidir 10 min et d\u00e9moulez-les.<\/li>\n<li>Dressez-les individuellement ou dans un plat.
