Mais, celui-ci est et je vous le dis en ce moment probablement un top 3.<\/p>\n<p>Des couches et des couches de pommes de terre, une d\u00e9licieuse cr\u00e8me r\u00e9duite infus\u00e9e d&#039;ail et d&#039;herbes, un soup\u00e7on de muscade et de fromage fondant.<br \/>\nCuit au four \u00e0 feu doux pendant 4 heures, puis press\u00e9 toute la nuit. Enfin croustillant avec plus de beurre.<\/p>\n<p>Dois-je continuer ? Placez-le sur un feu moyen-doux pour infuser pendant environ 15-20 minutes.<\/li>\n<li>Pendant ce temps, \u00e9pluchez vos pommes de terre et conservez-les dans de l&#039;eau froide. Passez votre cr\u00e8me infus\u00e9e au tamis et jetez les aromates.<\/li>\n<li>Alignez votre plat (j&#039;ai utilis\u00e9 une casserole 1\/3) avec du papier sulfuris\u00e9 et mettez-le de c\u00f4t\u00e9.<\/li>\n<li>\u00c0 l&#039;aide d&#039;une mandoline japonaise sur le r\u00e9glage le plus fin, tranchez l&#039;une de vos pommes de terre et commencez \u00e0 les superposer en vous assurant que chaque tranche de pomme de terre se chevauche.<\/li>\n<li>Assaisonnez l\u00e9g\u00e8rement chaque couche avec de la noix de muscade, du sel et du poivre et ajoutez du fromage et de la cr\u00e8me toutes les 3 couches.<\/li>\n<li>Pr\u00e9chauffer le four \u00e0 300F.<\/li>\n<li>R\u00e9p\u00e9tez le processus jusqu&#039;\u00e0 ce que vous atteigniez les 8\/10 du plat ou que vous manquiez de pommes de terre. Appuyez sur les couches pour qu&#039;il y ait suffisamment de cr\u00e8me et qu&#039;elles soient uniformes.<\/li>\n<li>Couvrez la derni\u00e8re couche de papier sulfuris\u00e9 et enfermez-la dans du papier d&#039;aluminium. Placez le plat sur un plateau pour \u00e9viter les d\u00e9versements dans le four.<\/li>\n<li>Cuire les pommes de terre pendant 4 heures \u00e0 300F.<\/li>\n<li>Retirer le papier d&#039;aluminium et planter un couteau dans la dauphinoise, elle doit ressortir facilement et propre. Si ce n&#039;est pas le faire cuire un peu plus longtemps.<\/li>\n<li>Vous pouvez vous arr\u00eater l\u00e0 et en profiter tel quel. Mais si vous me connaissez maintenant, vous savez que j&#039;aime aller plus loin.<\/li>\n<li>Si vous \u00eates toujours avec moi \u00e0 ce stade, nous allons placer un autre morceau de papier sulfuris\u00e9 dessus, puis le recouvrir d&#039;un plat de la m\u00eame taille et le presser l\u00e9g\u00e8rement en ajoutant un poids l\u00e9ger comme une bo\u00eete de haricots ou de tomates.<\/li>\n<li>Placer au r\u00e9frig\u00e9rateur toute la nuit.<\/li>\n<\/ul>\n<p><strong>La touche finale<\/strong><br \/>\n4 brins de Thym<br \/>\n2 brins de romarin<br \/>\n2 cuill\u00e8res \u00e0 soupe d&#039;huile de cuisson<br \/>\n5 cuill\u00e8res \u00e0 soupe de beurre (non sal\u00e9)<\/p>\n<ul>\n<li>Retirez la pomme de terre dauphinoise de son plat en coupant le c\u00f4t\u00e9 pour cr\u00e9er un rectangle parfait et d\u00e9taillez un pav\u00e9 de 2 pouces de large.<\/li>\n<li>Pr\u00e9chauffez votre four \u00e0 350F.<\/li>\n<li>Dans une po\u00eale antiadh\u00e9sive \u00e0 feu moyen, ajoutez un peu d&#039;huile et placez le pav\u00e9 pour qu&#039;il soit croustillant.<\/li>\n<li>Ajoutez votre beurre, vos herbes et votre ail et assurez-vous qu&#039;il est dor\u00e9 de chaque c\u00f4t\u00e9 et arrosez de beurre pendant quelques minutes.<\/li>\n<li>Placer les pav\u00e9s sur une plaque et au four \u00e0 350F pendant 15 minutes ou jusqu&#039;\u00e0 ce qu&#039;ils soient croustillants et que le centre soit chaud.<\/li>\n<li>Badigeonnez-les avec un peu de beurre restant pour un peu plus de brillance et d\u00e9gustez.<\/li>\n<li>Bon app\u00e9tit!
