Aujourd'hui nous m\u00e9langeons 2 recettes pour le plus grand de notre plaisir, la traditionnelle Pomme Anna et le fameux pav\u00e9 cr\u00e9\u00e9 par Thomas Keller.<\/p>\n
Assez simple et \u00e9conomique, vous n'aurez besoin que de pommes de terre, de beurre clarifi\u00e9 et d'herbes. Vous pouvez comme toujours le manger tout de suite, mais je vais le presser toute la nuit et le faire frire dans du beurre plus clarifi\u00e9.<\/p>\n

Pour 8 personnes<\/p>\n
5 pommes de terre (pel\u00e9es et lav\u00e9es)
\n3 branches de thym (marin\u00e9 et hach\u00e9)
\n2 tiges de romarin (cueillies et hach\u00e9es)
\n1 tasse (250 ml) de beurre clarifi\u00e9<\/p>\n
-Tailler un plat rectangle (11\u00d75) avec du papier sulfuris\u00e9.
\n- Faire fondre le beurre clarifi\u00e9.
\n-A l'aide d'une mandoline, trancher les pommes de terre en fines lamelles.
\n-\u00c9tendre une rang\u00e9e de pommes de terre, les badigeonner de beurre clarifi\u00e9, saler et poivrer.
\n-R\u00e9p\u00e9tez le processus jusqu'en haut, en ajoutant des herbes hach\u00e9es toutes les 2 couches.
\n-Ajouter uniquement du beurre \u00e0 la derni\u00e8re couche et la recouvrir de papier sulfuris\u00e9.
\n-Pr\u00e9chauffez votre four \u00e0 325F. Couvrez le plat de papier sulfuris\u00e9 et placez-le au four pendant 2 heures 1\/2.
\n-V\u00e9rifiez si les pommes de terre sont cuites en y glissant une galette test\u00e9e, si elle ressort sans effort, c'est cuit.
\n-A partir de l\u00e0, 2 options, la premi\u00e8re est de le manger tel quel. Pour notre deuxi\u00e8me option, on va le presser en ajoutant du poids sur le gratin et le placer au frigo toute la nuit (voir vid\u00e9o sur TikTok ou instagram).
\n-Le lendemain, d\u00e9collez le pav\u00e9 Anna du plat, retirez le papier et d\u00e9coupez-le en rectangle (vous pouvez couper le bord pour un r\u00e9sultat plus propre).
\n- Faire chauffer le beurre clarifi\u00e9 dans une casserole profonde. Placez-y le pav\u00e9 et faites-le frire de chaque c\u00f4t\u00e9.
\n-Placer sur du papier absorbant pour retirer l'exc\u00e9dent de gras, assaisonner de fleur de sel et d\u00e9guster.
