Sur la monture la plus fine, r\u00e9alisez un ruban parfait avec le daikon.<\/p>\n<p>Enroulez les rubans autour de votre doigt pour cr\u00e9er de petits tubes et placez-le sur une bo\u00eete rectangulaire pour le service.<\/p>\n<p><u>Croustilles de Nori\u00a0:<\/u><\/p>\n<p>Cr\u00e9er dans un bol \u00e0 m\u00e9langer une bouillie, en ajoutant de l&#039;eau et de la farine de riz ensemble.<\/p>\n<p>Dans la friteuse, d\u00e9posez les chips de nori apr\u00e8s qu&#039;elles aient pris un bain de bouillie et faites-les frire jusqu&#039;\u00e0 ce qu&#039;elles soient croustillantes. Assaisonner \u00e0 chaud et r\u00e9server sur du papier absorbant pour \u00e9goutter l&#039;exc\u00e9dent de gras.<\/p>\n<p><u>D\u00e9s de pomme Grany Smith :<\/u><\/p>\n<p>R\u00e9aliser une brunoise de pomme et r\u00e9server dans un m\u00e9lange d&#039;eau citronn\u00e9e pour \u00e9viter que la pomme ne s&#039;oxyde.<\/p>\n<p><u>Coriandre cisel\u00e9e :<\/u><\/p>\n<p>Laver soigneusement la coriandre et la s\u00e9cher dans une essoreuse \u00e0 salade<\/p>\n<p>Hachez-le finement et conservez-le.<\/p>\n<p><strong><u>ASSEMBLAGE\u00a0:<\/u><\/strong><\/p>\n<p>Dans un bol en inox, m\u00e9langer les d\u00e9s de thon, la coriandre cisel\u00e9e, les pignons de pin, la brunoise de pomme et une couple de cuill\u00e8re de vinaigrette.<\/p>\n<p>Cr\u00e9ez un halo parfait dans une assiette coup\u00e9e, ajoutez le gingembre marin\u00e9, 3 tubes de daikon, le cresson \u00e0 la coriandre et le shizo sur le dessus du halo.<\/p>\n<p>Cassez le nori en morceaux et placez-les au centre du halo<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>","protected":false},"excerpt":{"rendered":"<p>Salut mes p&#8217;tits croissants Today we are doing a tuna tartare, one of my signature dish.
