{"id":2573,"date":"2022-08-28T15:39:52","date_gmt":"2022-08-28T15:39:52","guid":{"rendered":"https:\/\/chefromainavril.com\/?p=2573"},"modified":"2022-08-28T15:39:52","modified_gmt":"2022-08-28T15:39:52","slug":"mango-pate-de-fruit","status":"publish","type":"post","link":"https:\/\/chefromainavril.com\/fr\/mango-pate-de-fruit\/","title":{"rendered":"P\u00c2TE DE FRUITS \u00c0 LA MANGUE"},"content":{"rendered":"<p>Salut mes p&#039;tits croissants !<\/p>\n<p>Aujourd&#039;hui on pr\u00e9pare de d\u00e9licieuses p\u00e2tes de fruits, et vous avez parl\u00e9 pour le choix du parfum, alors on va faire de la mangue !<\/p>\n<p>Ok donc cette recette peut vous sembler \u00e9trang\u00e8re, mais et si je vous disais que ce sont les anc\u00eatres du Sour Patch..<br \/>\nLa p\u00e2te de fruit a \u00e9t\u00e9 invent\u00e9e (du moins on en voit des traces) au 10\u00e8me si\u00e8cle (Moyen Age) de retour en France.<\/p>\n<p>Bien que j&#039;aie fait le mien avec de la mangue fra\u00eeche 100%, ils \u00e9taient faits avec des fruits \u00e0 noyau secs.<br \/>\nCette recette est assez simple et n\u00e9cessite peu d&#039;ingr\u00e9dients.<\/p>\n<p>Nous utiliserons de la pectine pour fixer la gel\u00e9e et de l&#039;acide citrique pour aromatiser le m\u00e9lange et l&#039;enrobage de sucre.<br \/>\nCe plat est \u00e9galement compl\u00e8tement v\u00e9g\u00e9talien.<\/p>\n<p>Ok ok, je sais que je parle de votre oreille. Fouettez-les tr\u00e8s bien ensemble. Cela permet d&#039;\u00e9viter que votre p\u00e2te de fruits ait des grumeaux de pectine. (Personne n&#039;aime \u00e7a).<br \/>\nSi vous utilisez des fruits frais, faites-les cuire 10 min avec un peu d&#039;eau et mixez-les.<\/li>\n<li>Passez-les et pesez-les pour avoir la bonne quantit\u00e9.<\/li>\n<li>Si vous utilisez de la pur\u00e9e, chauffez-la \u00e0 120 degr\u00e9s. F.<\/li>\n<li>Fouetter constamment, ajouter le m\u00e9lange pectine\/sucre. Porter \u00e0 \u00e9bullition et laisser cuire une minute.<\/li>\n<li>Ajouter le sirop d&#039;\u00e9rable et le reste du sucre. Cuire \u00e0 223 degr\u00e9s, F.<\/li>\n<li>Une fois que le m\u00e9lange atteint 223\u00a0F, incorporer le m\u00e9lange d&#039;acide citrique et de jus de citron et cuire une minute de plus.<\/li>\n<li>Verser le m\u00e9lange dans un moule 1\/4 recouvert d&#039;une double pellicule plastique \u00e9paisse. Laisser reposer \u00e0 temp\u00e9rature ambiante jusqu&#039;\u00e0 ce qu&#039;il soit frais et tranch\u00e9. Cela pourrait prendre quelques heures. Une fois fermes, coupez-les en petits carr\u00e9s ou utilisez des emporte-pi\u00e8ces. Roulez-les dans votre sucre semoule acide.<\/li>\n<li>Vous pouvez les conserver dans un endroit sec de votre maison.
