Ideally, a European flour with a nice gluten stengh would be ideal but not obligatory. This is the end of Day 1.<\/span><\/div><\/li><\/ol><\/div><div class=\"wprm-recipe-instruction-group\"><div class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\" style=\"color: #000000;\">BEURRAGE<\/div><div class=\"wprm-spacer\" style=\"height: 5px;\"><\/div><ol class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-7170-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"1\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">\u00a0Now we are on day 2, lay out your evenly sliced pieces of your high quality butter (I use St Brigid&#39;s) on parchment paper, until they\u2019re roughly 5x5 inches. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Leave about \u00bd-inch of space around the edges for pounding later on<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"2\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Fold your parchment paper over the butter so that the edges of the wax paper measure to be 5x5 inches.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"3\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Flip over so the seam side is done and using a rolling pin, pound out the butter so it spreads out to the edges evenly.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"4\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Place in the fridge to chill for 15-25 minutes, or until it reaches 4-5 degree Celcius.<\/span><\/div><\/li><\/ol><\/div><div class=\"wprm-recipe-instruction-group\"><div class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\" style=\"color: #000000;\">FEUILLETAGE (LAMINATION)<\/div><div class=\"wprm-spacer\" style=\"height: 5px;\"><\/div><ol class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-7170-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"1\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Lightly flour a work surface and pull your dough out of the fridge. With your rolling pin, flatten out and elongate all of the edges of your dough. <\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"2\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Place your butter in the center of your dough.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"3\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Stretch each half over the butter, making sure they join, encasing it.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"4\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Once it is totally encased and no butter is showing, pinch and close the edges shut.\u00a0<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"5\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Flip over seam side down.-Lightly flour your rolling pin and the top of your dough.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Using your rolling pin, press down multiple times along the entire length of the dough, helping encase the butter.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Next, roll with an even pressure and form the dough into a long rectangle, roughly 18-inches in length.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"6\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Once rolled, grab the bottom of your dough and fold it \u00be of the way up the rectangle.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Take the top half and fold it the remaining \u00bc of the way until both ends meet evenly.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Lightly pat down so they stick. Brush any excess flour.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Then fold the longer portion over the short portion, making an envelope shape.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"7\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Using your rolling pin, lightly tap down so that all of the layers are stuck together. DO NOT PRESS.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"8\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Wrap in plastic wrap and let rest in the fridge for one hour.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"9\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">When rested, unwrap your dough and place it on a lightly floured work surface.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"10\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Using your rolling pin, roll the dough in the same direction; shaping it into a wider rectangle. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">As done previously, give the dough a tap along the entire surface and roll it out with even pressure until it reaches about 18-inches in length.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"11\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Grab the top portion of your dough and fold it \u2153 of the way down, then fold the bottom part so that it overlaps evenly on the other side.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"12\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Wrap in plastic wrap and place in the fridge for 1-12 hours as needed.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"13\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">For the final roll, roll your dough into a wider and thicker rectangle. (23 cm width and 5-6 mm thickness.)<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-13\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"14\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">To shape the croissants, make marks along the bottom of the dough at 9 cm intervals. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Repeat by following in between the two marks at the top as well.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-14\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"15\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">To cut the croissant, take a long sharp knife or a pasta cutter and make cuts using a ruler following along the points you made earlier. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">These cuts should make 6-7 croissant triangles and the bastard cuts on the outside.<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-15\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"16\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Take a triangle of dough and gently elongate it to make it about an inch longer. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Next, roll the dough up very tightly, starting from the longer end up to the point of the triangle. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">You can slightly push the point down as you roll it over it. Push down slighly. (Make sure the pointy part is below the body of the croissant).<\/span><\/div><\/li><li id=\"wprm-recipe-7170-step-2-16\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\" value=\"17\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\"><span style=\"display: block;\">Make sure to not squeeze the layers.
