Salut mes p’tits croissants!
I am going to be honest, this might be the best cookies ever. The perfect mix of chewy and crunchy, sweet with a hint of salt and packed with chocolate.
Now that we have a delicious base, we’re going to add chocolate candies to make it the most epic cookie ever made (ok maybe I’m bias).
They also are so super easy to make, keep super well in the fridge or freezer and are as delicious raw that they are cooked.
Ok, let get baking. Shall we?
Makes about 38 cookies
Cookie dough
4 1/8 cups (520 g) Flour
½ tsp (4 gr) Salt
½ tsp (3gr) Baking powder
½ tsp (3gr) Baking soda
1 1/4 cups (275 g ) Butter
2 1/4 cups + 3 tbsp (500 g) Brown sugar
2 Eggs
2 Yolks
1 3/4 cup (450 g) Dark Chocolate 70%
½ tsp (5gr) Vanilla extract
6 pcs Chocolate candies (of your choice)
-In a stand mixer with the whisk attachment, cream the butter and sugar together for 10 min until fluffy.
-Add eggs, scrape down the sides so that all of it combines, mix again.
-Place the dry ingredients into the bowl and mix together until smooth.
-Add chocolate and mix for a minute.
-Portion 50 gr balls or 1¾ oz and roll them out.
-Slighly pat them down with 2 fingers, cut the chocolates into smaller pieces and add chunks of chocolate candy on top of each cookies.
-Rest in fridge to firm up for 15 min.
-Bake at 350℉ , for 11 minutes.
-Place them on a wire rack to cool down.
