SPUN SUGAR | COTTON CANDY (BARBE À PAPA)

Salut mes p’tits croissants!

Today we are making cotton candy or spun sugar. We call it Barbe à papa in France.

It’s really easy to make and only require sugar and water. However, it is really messy and you might be stepping on caramel for the next 2 weeks.
But well worth it.

It is also a great garnish for a decadent pastry. Ok enough talking, let’s get cooking.

Serves 4

Cotton candy
125gr (1/2 cup) sugar
60ml (1/4 cup) water

  • Place the water and sugar in a saucepan and bring it to a light caramel.
  • Grease the rim of a stainless steel bowl or a rolling pin.
  • Using a cut up whisk or 2 forks held side by side, deep it in the caramel.
  • Shake it over the bowl or rolling pin back and forth at high speed.
  • Repeat the process until the caramel is all gone or hard.
  • Feel free to warm it up if needed to male more cotton candy.
  • Shape it whichever way you want it. And enjoy it right away.
