FROG LEGS EN PERSILLADE
Tell me you're French without telling me you're French... well how about some frog legs?They taste like chicken they say, well to be honest I don't really agree but one thing I know, they are delicious and so easy to make. So shall we?!
Equipment
- 1 large frying pan
- 1 fine mesh
Ingredients
Frog legs en persillade
- 32 pcs Frog legs
- 250 gr Butter (1 cups)
- 100 gr AP flour (3/4 cup)
- 1 bunch Curly parsley
- 4 cloves Garlic
- To taste Salt and pepper
- 1 pc Lemon (cut into 4)
Instructions
Frog legs en persillade
- Remove the back part out of each frog legs and split them in half, down the centre.
- Peel and minced the garlic. Wash and chop the parsley, reserve.
- Place the flour in a large deep dish and place the frog legs over top.
- Mix well and place them in the fine mesh to sift the extra flour.
- At this point you can either do a clarified butter or use it as is.
- Heat up the half the butter in large frying pan in medium heat and place the frog legs when foaming.
- Seared them on both sides until golden brown.
- Reserve them on absorbing paper.
- In the same pan, add the rest of the butter with the garlic and parsley. Let it cook gently for 1 minute and add the frog legs back in. Cook for another 5 min.
- Serve right away while hot with a lemon wedge.
