RICE PUDDING DUO
I don't know about you, but I personally love a rice pudding, it reminds me of my childhood and something I enjoy eating every time I visit my family. And one is good but 2 is even better, so we are going to make a vanilla one as well as chocolate one. Because why not. Alright, let's get cooking shall we?!
Equipment
- 1 medium size sauce pan
- 1 strainer
- 1 Whisk
- 1 heat resistant spatula
Ingredients
Vanilla rice pudding
- 600 ml Milk (full fat) (2 1/2 cups)
- 70 gr Short grain rice (I use arborio) (1/3 cup)
- 50 gr Sugar (1/4 cup)
- 15 ml Vanilla paste (1 tbsp)
- 1 pinch Cinnamon (optional)
Chocolate rice pudding
- 50 gr 70% dark chocolate (1/2 cup)
Instructions
Vanilla rice pudding
- In a medium saucepan on medium heat. Place the milk, sugar and vanilla.
- Whisk it and bring it to a simmer. Once simmering, add the rice.
- Cook for about 20 min or until the rice is cooked.
- Strain the milk, and split it into 2 equal amounts.
- Place 1/2 the rice with the vanilla milk back into the saucepan and cook for another 5 minutes.
- Take it off the heat, place the pudding into 2 ramekins and let it cool. It will thicken as it cools.
Chocolate rice pudding
- In the same saucepan, add the other half of the milk, rice and the chocolate.
- Stir and let it cook for another 5 minutes.
- Take it off the heat, place the pudding into 2 ramekins and let it cool. It will thicken as it cools.
- Now its time to enjoy, bon appétit!
Notes
You can switch the regular sugar to a brown sugar.
If you prefer a more custardy pudding you can also add an egg yolk to the sugar whisk it and then emulsify it with the rice milk.
