I don't know about you, but I personally love a rice pudding, it reminds me of my childhood and something I enjoy eating every time I visit my family. And one is good but 2 is even better, so we are going to make a vanilla one as well as chocolate one. Because why not. Alright, let's get cooking shall we?!
In a medium saucepan on medium heat. Place the milk, sugar and vanilla.
Whisk it and bring it to a simmer. Once simmering, add the rice.
Cook for about 20 min or until the rice is cooked.
Strain the milk, and split it into 2 equal amounts.
Place 1/2 the rice with the vanilla milk back into the saucepan and cook for another 5 minutes.
Take it off the heat, place the pudding into 2 ramekins and let it cool. It will thicken as it cools.
Chocolate rice pudding
In the same saucepan, add the other half of the milk, rice and the chocolate.
Stir and let it cook for another 5 minutes.
Take it off the heat, place the pudding into 2 ramekins and let it cool. It will thicken as it cools.

Notes
You can switch the regular sugar to a brown sugar.If you prefer a more custardy pudding you can also add an egg yolk to the sugar whisk it and then emulsify it with the rice milk.
